Pickled Plum

My friend Miyuki send me a recipe of Pickled Plum, it calls “Ume no Suzuke”.

The recipe is below. (please click the printer icon, if you want to keep the recipe)

1 pack of Plum (approximately 200g)

1/3 Cup of Vinegar (Japanese recipe 1 cup is 200cc! be careful!! it is not 250cc)

1 Cup of Water

(pint of sugar)

Put all ingredients into a container, then keep it in Refrigerator!

I don’t know exactly how long does it need to keep in Refrigerator, but I guess you can eat 7 days later.

Miyuki’s recipe reminds me “Plum Juice”. My mum made plum juice every summer for us!

It is very easy to make. So I put this recipe as well.

Ingredients are Green Plum and Sugar Candy (Rock Candy), both should be same ratio.

So if you use 1 kg of dry plum, you need 1 kg of sugar candy.

  1. Take stem off from green plums and wipe it with cloth
  2. Put plums into resealable bag and place into freezer for a day
  3. Next day, put plums and sugar candy alternately into a container
  4. Leave it cool place for 10 days
  5. Plum extract is in the container
  6. When you drink it, mix the plum extract with the water. (plum extract 1 : water 3~5)

Don’t keep it long, drink it within 2 weeks!

Rolled Sushi

I found the recipe my husband made!
He used this recipe for teaching English.

  1. We need a delicious filling, so let’s get that ready first!
  2. Let’s cut the salmon to make sushi rolls! (If you would like to eat “Sashimi”, cut the strips into thin slices.

  4. Cut your cucumber into strips. If you have a time, please cut seeds part.

  6. Next remove the seed from the avocado and cut it into slices.

  8. Get your crab sticks!

  10. Now let’s put it all together!
  11. Put some nori onto your bamboo rolling mat.

  13. Spread the rice over the nori.

  15. Now put the cucumber, salmon, crab sticks and avocado onto the rice. Arrange these ingredients in a line, like in the picture below.

  17. Now roll! Be carful to keep everything inside!

  19. When you have finished rolling, remove the bamboo mat, and cut the suchi roll into slices, like in the picture below. Garnish with a little pickled ginger!
  20. Now enjoy your  Rolled Sushi!!

Japanese people use “Dashi” a lot for Japanese food.

I usually use instant dashi stock because it is easy and save time to make “Dashi”.

But if you have a time, or if you don’t want to use instant stock, please challenge to make it.

I found Video at You Tube. The person is making a very small amount of Dashi, but we usually make certain amount and stock it. You can keep it 2-3 days in a fridge.

Japanese kids love this one.
Rolled Omelette, we called “Tamago yaki”.
My mum always put this into my lunch box!

I found the video on the You Tube.

This person is cooking “Dashimaki Tamago” and it includes extra ingredients.

But “Dashimaki Tamago” is a bit difficult to rolled up, so I put up basic Rolled Omelette recipe.

**Correction**

On the recipe, I wrote 2 tbsp, but it is 2 tsp.  Sorry,,, if you put 2 Tbsp, it’ll be too sweet.

Also if you don’t want to have sweet omelette, just omit sugar to add.

One of my favourite side dish is “White radish and Onion with Sesame Mayo Salad”.

It is easy to cook, doesn’t need to use stove, or oven!

Also it is healthy and cheap!

My mother in-law wants to have a recipe of Amber sauce.

Amber sauce is good with Tofu.

This is actually what I made when she visited to our place….

Well, Tofu ball with amber sauce.

That day, I didn’t want to use oil so much, so I made Tofu balls….instead of Deep-Fried Tofu.

But usually I use amber sauce with Deep-Fried Tofu, which we call “Agedashi-dofu” in Japanese.

Inari zushi

One day, My sister Jenny made a “Inari zushi” for GOHAN Club.

Esther really liked it, so I created a recipe for it.

The name “Inari” is originally one of Shinto Gods. Long story short, sometime in the history, some people used the chinese charactor “FOX” by mistake when they wrote that God’s name. Then people started thinking Fox is God’s messenger and they started to enshrine idol of Fox in “Inari shrine”.

Then people confused Inari-God and Fox as a God messenger, and gradually people believe Inari-God = Fox. Well,  people thinks Fox likes deep-fried bean curd, so “Inari-zushi”  name was taken from Fox God.
